Instructions
-
Drain and rinse 1 can of black beans in a colander.
-
Heat the beans in a saucepan over medium heat for 3-4 minutes, stirring occasionally, until warmed through.
-
Season the warm beans with salt, pepper, and optional cumin or chili powder to taste (about 1/2 tsp cumin or 1/4 tsp chili powder total).
-
Warm tortillas using one of these methods: directly over a gas flame for 10-15 seconds per side until lightly charred, in a dry skillet over medium heat for 20-30 seconds per side until soft and warm, or wrapped in a damp paper towel and microwaved for 30 seconds.
-
Place approximately 1/4 cup warm beans in the center of each tortilla.
-
Add toppings: diced tomatoes, 2 tbsp salsa, cheese, sliced avocado, or any other preferred toppings.
-
Fold tortillas and serve immediately.
💡 Notes
- Budget-friendly, quick, and very flexible with toppings.
- Extra beans can be refrigerated for 4 days or frozen for up to 3 months.
