Cook spaghetti according to package directions until tender. While pasta cooks, brown the butter in a saucepan over medium heat — it will foam then turn golden brown.

Drain pasta but do not rinse. Pour brown butter over pasta, sprinkle with mizithra cheese, and toss to coat. Garnish with parsley if desired.
