Heat a large non-stick wok or skillet to medium-high heat. Add the diced chicken and 2 tbsp oil; sauté for 4-5 minutes until cooked through. Remove chicken from the skillet and set aside.

In the same skillet, add the frozen peas and carrots blend, and chopped onion. Sauté for 2-3 minutes.

Add 2 cloves minced garlic and cook for 1 more minute.

Push the vegetables to one side of the skillet and pour the 2 lightly beaten eggs on the other side; scramble them together with the vegetables.

Return the cooked chicken to the skillet along with 3 cups cooked rice and 3-4 tbsp low-sodium soy sauce. Stir-fry for another 2-3 minutes.

Taste and adjust seasonings (salt, pepper) as needed. Add 1-2 tbsp sriracha for spice if desired.

Serve hot, optionally garnished with green onions.
