Instructions

  1. In a large bowl, whisk together all marinade ingredients (lime juice, lime zest, minced garlic, cilantro, 4 tbsp oil, brown sugar, chili powder, cumin powder, salt, and black pepper).

  2. Add 1 pound chicken (breasts or thighs) to the marinade bowl and mix until fully coated. Marinate for at least 20 minutes (or up to 8 hours for more flavor).

  3. Heat a grill or skillet to medium-high heat. Cook marinated chicken for 5-8 minutes per side until cooked through. Let cool 5 minutes, then slice.

  4. Place 2 cups sliced bell peppers in the same pan and cook for 3-4 minutes until charred.

  5. Allow everything to cool to room temperature.

  6. Distribute 1 cup cooked rice into each of 4 meal-prep containers, then divide sliced chicken and peppers equally among them.

  7. Seal containers and refrigerate for up to 4 days.
