In a small saucepan, mix sugar, water, and cornstarch until dissolved. Heat over medium heat, stirring constantly, until mixture boils and thickens. Remove from heat and cool completely — glaze will thicken more as it cools.

Place peeled, sliced peaches in a large bowl. Pour half the glaze over the fruit and gently mix to coat. Add more glaze as needed.

Pour glazed peaches into the pie crust, piling as high as desired. Refrigerate several hours or overnight. Serve cold with whipped cream.
