Heat 3 tablespoons olive oil in a large skillet or pot over medium heat.

Add diced onion (about 1 medium onion) and cook for 3-5 minutes, stirring occasionally, until softened and slightly translucent.

Add 3 minced garlic cloves and cook for 1 minute until fragrant.

Add 2 tablespoons curry powder and 1 teaspoon ground cumin. Stir constantly for about 1 minute to toast the spices and release their flavors.

Add drained and rinsed garbanzo beans (1 can) and stir to coat with the curry mixture.

Pour in the diced tomatoes with their juice and stir to combine well.

Bring to a gentle simmer over medium heat and cook for 15 minutes, stirring occasionally.

Season with salt and pepper to taste. Taste and add additional curry powder or cumin if desired. Add red pepper flakes for heat if desired.

If rice is not already cooked, prepare 2 cups of cooked rice according to package directions while the curry simmers.

Serve curry over approximately 1/2 cup cooked rice per serving in individual bowls. Top with chopped cilantro if desired.

- Hearty, flavorful, and vegetarian.
- Can add 1/2 cup coconut milk in the last 5 minutes for a creamier version, or add 1 cup frozen vegetables along with the beans.
- Refrigerate leftovers for up to 4 days or freeze for up to 3 months.
