In a large cast iron skillet, flatten ground beef and cook over medium heat without stirring until the bottom is brown and crispy. Flip and continue cooking, breaking up the meat, until no pink remains. Remove meat from pan.

In the meat drippings, cook the onion, bell pepper, and mushrooms a few minutes until soft. Dissolve cornstarch in broth, then add ketchup, Worcestershire, salt, and pepper.

Return meat to pan and add the broth mixture. Simmer over low heat 5 minutes or until little liquid remains. Top toasted buns with meat and a slice of provolone. Broil briefly to melt cheese if desired.
