Preheat oven to 400°F and line a baking sheet with parchment paper.

Toss potato pieces with 2 tbsp olive oil, 1 tsp Italian seasoning, ½ tsp kosher salt, and black pepper to taste. Spread evenly on the prepared baking sheet.

Roast potatoes for 20 minutes.

While potatoes are roasting, combine trimmed and halved green beans with 1 tbsp olive oil, ½ tsp garlic powder, and ¼ tsp kosher salt in the same bowl used for potatoes.

After the initial 20 minutes, remove the baking sheet, stir the potatoes, then add the green beans in an even layer around them.

Roast for another 25 minutes until potatoes are tender inside and beans are fork-tender (total roasting time: 45 minutes).

Sprinkle with ⅓ cup grated parmesan cheese and chopped fresh parsley if desired.

Serve immediately. Store leftovers in a sealed container for up to 4 days.
